Innovators are using tomatoes, eggplant, carrots, pea starch and an Asian root vegetable called konjac to make imitation smoked salmon, tuna, shrimp and sushi products, The Wall Street Journal reported.
In the past, fake seafood was made with soy and wheat gluten. But these companies are developing manufacturing processes and specialized machinery to better approximate the flakiness, texture and taste consumers are accustomed to experiencing with real tuna, salmon and shrimp products.

NEARLY 1 MILLION SQUARE MILES OF ARCTIC OCEAN NOW PROTECTED FROM COMMERCIAL FISHING
Commercial fishing has just been banned in an area of the Arctic covering nearly one million square miles — about the size of the Mediterranean.
The Guardian reports that per the Central Arctic Ocean agreement signed in Greenland last Wednesday, commercial fishing will be prohibited for at least the next 16 years. While no companies currently fish there, rising global temperatures have melted areas previously covered in ice, allowing for ships to traverse the area. The U.S., Russia, Canada, Norway, Denmark, Iceland, Japan, South Korea, China, and the EU have all agreed to the commercial fishing ban.
VEGAN SEASTAR SEAWEED-BASED TUNA AND SASHIMI LAUNCHES IN THE NETHERLANDS AT JUMBO SUPERMARKET
A new brand of plant-based seafood called Vegan SeaStar has launched in the Netherlands. The company is a collaboration between Dutch plant-based product commercial agent, Vegan XL, and the Amsterdam-based comfort food restaurant, Vegan Junk Food Bar.

Whole Foods Market is set to release its first cookbook since 2002. Delish reports that the new plant-forward cookbook, called “The Whole Foods Cookbook: 120 Delicious and Healthy Plant-Centered Recipes,” is written by co-CEO and co-founder John Mackey and features recipes from “Wicked Healthy” vegan chefs and brothers Derek and Chad Sarno.
