- Preheat oven to 350°F.
- In a large bowl, combine all biscuit ingredients and stir until a cohesive dough forms.
- Lightly flour cutting board or work surface and transfer biscuit mixture onto board. Gently knead dough for 1 minute until dough is smooth.
- Roll out dough to ½- to 1-inch thick and cut out 4 biscuits using a biscuit cutter or mason jar. Place biscuits on a sheet pan and bake for 10-12 minutes, or until risen and golden brown.
- To a skillet over medium-high heat add oil and fish sticks. Cook for 3-4 minutes on each side or until internal temperature reaches 165°F.
- In a small dish, stir together tartar sauce ingredients.
- To assemble, slice biscuits in half and top each cut side with melted butter. Place 3-4 fish sticks on one half and drizzle generously with tartar sauce. Top with other half of biscuit and serve.
