  • In a large bowl, combine all filling ingredients and mix well. Cover bowl and chill in the refrigerator overnight.
  • To make sandwiches, spread both sides of rye bread slices with butter. Place two pieces onto a hot skillet and cook on medium heat for about 1 minute or until golden. Flip the bread and scoop 3-4 large tablespoons of filling mixture onto one side of the bread.
  • Layer on cheese and cover with the other slice of bread. Using a spatula, lightly place pressure onto the sandwich and cook for about 2 minutes. Flip and repeat until cheese is melty and the sandwich has flattened.
  • Repeat for remaining filling and bread. Slice sandwiches in half and serve.
Tuna Melt with Pickled Jalapeños

For Filling

  • 2 packets Good Catch® Naked in Water Plant-Based Tuna
  • ½ cup plant-based mayonnaise
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 3 tablespoons pickled jalapeños, drained well and finely chopped
  • 1 tablespoon pickled jalapeño brine
  • 3 tablespoons capers, drained well
  • 3 tablespoons finely chopped dill pickle
  • ¼ cup finely chopped red onion
  • 1 rib celery, finely chopped
  • 1 teaspoon crushed red pepper flakes

 

  • 6 pieces marble rye bread
  • 6 slices plant-based cheese of choice
  • 3 tablespoons plant-based butter
