- Cook the orzo according to package directions; drain well and scoop into a large bowl.
- Add the chopped tomatoes, cucumber, olives and plant-based tuna to the orzo and mix well.
- Crumble in the feta and gently mix together.
- In another bowl, whisk together vinaigrette ingredients. (Recipe will make a bit more than needed.)
- Dress the salad with the vinaigrette according to taste. Garnish with fresh dill and dried oregano.
