  • Cook the orzo according to package directions; drain well and scoop into a large bowl.
  • Add the chopped tomatoes, cucumber, olives and plant-based tuna to the orzo and mix well.
  • Crumble in the feta and gently mix together.
  • In another bowl, whisk together vinaigrette ingredients. (Recipe will make a bit more than needed.)
  • Dress the salad with the vinaigrette according to taste. Garnish with fresh dill and dried oregano.

Tuna Orzo Salad

INgredients

  • 1 cup dry orzo
  • ⅔ cup chopped cucumber
  • 1 tomato, seeded and chopped
  • ⅓ cup pitted Kalamata olives
  • ⅓ cup crumbled plant-based feta
  • 1 pouch Good Catch® Plant-Based Naked in Water Tuna

For Vinaigrette

  • ½ cup red wine vinegar
  • ¼ cup olive or grapeseed oil
  • ½ teaspoon plant-based honey
  • 1 teaspoon dried oregano, plus more for garnish
  • 1 teaspoon chopped fresh dill, plus more for garnish
  • Salt and pepper, to taste
