• Preheat oven to 375°F.
  • Cook pasta according to package instructions.
  • In a separate pan, add squash, cashews, garlic, bay leaves, and cover with water. Bring to a boil and cook 5-6 minutes or until squash is tender.
  • Drain squash and remove bay leaves.
  • Add cooked squash, cashews and garlic to a high-speed blender along with milk, olive oil, nutritional yeast, lemon juice, salt and pepper and blend on high for 1-2 minutes until smooth and creamy.
  • Toss cheese sauce, tuna, peas and cooked pasta together.
  • Pour mixture into a casserole dish and top with fried onions.
  • Place casserole dish into oven and bake for 10-12 minutes, then add more crispy onions on top just before serving.
Tuna Mac and Cheese with Peas and Fried Onions

  • 1-pound cavatappi pasta (or macaroni of choice)
  • 1 package Good Catch® Naked in Water Plant-Based Tuna
  • 1 cup frozen peas, thawed
  • 2 tablespoons crispy fried onions, plus more for garnish

For Cheese Sauce:

  • 2 cups peeled, seeded, and cubed butternut squash
  • ½ cup raw cashews
  • 4 cloves garlic
  • 2 bay leaves
  • 1 block cubed plant-based American cheese
  • 1 ½ cups plant-based milk
  • 2 tablespoons olive oil
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste
