- In a small bowl, stir together hollandaise ingredients. Set aside.
- Shape two plant-based crab cakes together to form one large crab cake. Repeat with remaining crab cakes.
- Set a skillet over medium heat and add oil and crab cakes. Cook for 5 minutes, then flip and cook another 5 minutes, or until internal temperature reaches 165°F. Remove from pan.
- To the same pan, add bacon and sauté for 1-2 minutes on each side. Remove from pan.
- Using the same pan, turn the heat to medium-low and add spinach and salt and pepper to taste and sauté about 30 seconds, until wilted. Remove pan from the heat.
- Toast English muffin and spread each side with cream cheese.
- Top muffins with bacon, spinach, plant-based egg and crab cakes.
- Drizzle hollandaise on top and sprinkle with chives.
