  • Preheat oven to 400°F and line a sheet pan with parchment paper.
  • Into a large bowl mix together butternut squash ingredients and spread onto sheet pan. Bake for about 30 minutes or until golden brown.
  • Meanwhile, prepare remaining ingredients. In a medium bowl, combine tuna ingredients and stir well until combined. Set aside to let flavors marry.
  • In a large bowl, add kale ingredients and massage kale until slightly softened and vibrant in color.
  • In another bowl, stir together cucumber ingredients. Repeat with radish ingredients in a separate bowl.
  • Once squash is done cooking, assemble bowls. Layer each with squash, kale, radishes, cucumber, cooked rice and tuna.

Tuna Salad

INgredients

  • 2–3 cups cooked rice

For Butternut Squash:

  • 3 cups cubed butternut squash
  • 2 tablespoons olive oil
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground black pepper

For Tuna:

  • 2 pouches Good Catch® Oil & Herbs Plant-Based Tuna
  • 1 tablespoon dried dill
  • 1 tablespoon olive oil
  • ⅓ cup chopped green or black pitted olives
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper
  • Juice of half a lemon, or 3 tablespoons caper brine

For Kale:

  • 1 bunch fresh kale, finely chopped
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground black pepper
  • Juice of half a lemon

For Cucumber:

  • 1 cucumber, sliced thinly
  • 1 tablespoon olive oil
  • Juice of half a lemon, or 3 tablespoons cider vinegar
  • 1 tablespoon dried dill
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground black pepper

For Radish:

  • 1 bunch radishes, tops removed and sliced thinly
  • 1 tablespoon olive oil
  • Juice of half a lemon, or 3 tablespoons cider vinegar

  • ½ teaspoon ground black pepper
