- Cook pasta according to package directions, reserving 1 cup pasta water.
- In a pan over medium heat, add reserved pasta water, butter, ¼ cup parmesan, salt and pepper and bring to a simmer.
- Add in cooked pasta and more parmesan and stir to coat. Remove from heat.
- Preheat a skillet on medium heat and add oil. Place fillets in pan and cook 4-5 minutes.
- Flip fillets and top each with ¼ cup marinara, 1 tablespoon parmesan and 1 slice mozzarella.
- Add 1 tablespoon water to pan, cover and let cook 4-5 minutes more until mozzarella is melted.
- To serve, plate spaghetti, top with fillet and garnish with parsley.
