- To a skillet set over medium heat, add oil. When oil is hot, add plant-based fish burgers. Cook for 10-12 minutes, turning halfway through. Set aside.
- In a small saucepan over medium-low heat, combine mayonnaise, butter, lemon juice and spices. Cook until just heated through, making sure not to boil.
- To serve, add microgreens and tomato slices to each English muffin half. Top with a burger and hollandaise sauce. Serve with additional sauce if desired.
