  • In a large bowl, combine kale, onion, celery, tuna and croutons. Top with dressing, then toss and massage until the dressing is equally distributed and the kale begins to soften and turn vibrant in color.

For Caesar Dressing

  • 1 ½ cups shredded plant-based parmesan, plus more for garnish
  • ⅓ cup plant-based mayonnaise
  • ⅓ cup capers, drained and minced
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2 ½ tablespoons lemon zest
  • 1 tablespoon Dijon mustard
  • 1 tablespoon dulse flakes or ripped whole leaf dulse
  • 1 ½ teaspoons crushed garlic

 

  • 9 cups (1 large bunch) lacinato kale, stemmed, torn into bite-size pieces, washed and patted dry
  • ⅓ cup thinly sliced red onion
  • 1 cup thinly sliced celery
