• Preheat skillet (cast iron preferred) over medium heat and add 2 tablespoons of oil.
  • Place frozen burgers on skillet and pan sear for 4-6 minutes.
  • Flip burgers, add butter to pan and top with lid for an additional 4 minutes. Remove from heat and slice into strips.
  • Heat up grill pan or grill on high heat. Drizzle remaining 1 tablespoon olive oil on the red onions, season with salt and pepper. Grill onions, flipping a couple minutes in. Remove from heat once you achieve grill marks on each side.
  • In a small bowl, mix all the harissa mayo ingredients.
  • Place pitas on hot grill pan or grill to soften.
  • Assemble each gyro by slathering harissa mayo on each pita, followed by slices of cooked burger, arugula, cucumber, grilled red onion and finish with feta. Top with more harissa mayo and enjoy.

INgredients

For Burgers

  • 1 box of Good Catch® Classic Plant-Based Fish Burgers
  • 3 tablespoons olive oil, divided
  • 1 tablespoon plant-based butter
  • 1 red onion, sliced in rounds
  • 2 pita
  • 1/2 cup arugula
  • 1 small cucumber, peeled and sliced thinly sliced in rounds
  • 1/4 cup plant-based feta
  • Fine sea salt and ground pepper to taste

Harissa Mayo (yields 1/2 cup)

  • 1/3 cup plant-based mayonnaise
  • 3 tablespoons prepared harissa
  • 2 tablespoons green onion, thinly sliced
  • 2 teaspoons lemon zest
