• In a large bowl, combine the first 10 ingredients and mash together until well combined.
  • Add potato starch and baking powder and mix well until a firm dough comes together.
  • Shape the dough with a scoop or with spoons into small fritters about 1 ½ inches in diameter.
  • In a large, heavy-bottomed pot, add 2 inches of vegetable oil and heat to 375°F.
  • Carefully fry the fritters in batches until golden in color, about 3 minutes per side.
  • Dry on paper towels to absorb excess oil.
  • Serve hot with your favorite dipping sauce, such as thousand island or ranch dressing.

  • ½ cup plant-based cream cheese
  • ½ cup diced celery
  • ½ cup thinly sliced green onion
  • ½ cup diced red bell pepper
  • 3 tablespoons thinly sliced chives
  • 2 teaspoons onion granules
  • 1½ teaspoons ground black pepper
  • 1½ teaspoons fine sea salt
