- In a large bowl, combine the first 10 ingredients and mash together until well combined.
- Add potato starch and baking powder and mix well until a firm dough comes together.
- Shape the dough with a scoop or with spoons into small fritters about 1 ½ inches in diameter.
- In a large, heavy-bottomed pot, add 2 inches of vegetable oil and heat to 375°F.
- Carefully fry the fritters in batches until golden in color, about 3 minutes per side.
- Dry on paper towels to absorb excess oil.
