- In a medium bowl combine cheeses until mixture is soft moldable. Add remaining ingredients through pepper and stir until well combined. Taste and adjust seasonings as needed.
- Lay 2 pieces lightly greased parchment paper or cling film on work surface.
- Halve cheese mixture and, using your hands, roll each portion into a ball. Place each ball onto prepared parchment or cling film and wrap, keeping shape as much as possible.
- Chill cheese balls for at least 2 hours, then coat with fresh chopped herbs and walnuts and serve with fresh vegetables, toast or crackers.
TIP
Cheese balls will keep, well wrapped, for up to 10 days in the refrigerator.
