- Cook pasta in well-salted boiling water according to package directions for al dente. Reserve ¼ cup pasta water, then drain pasta and set aside.
- Heat a medium sauté pan on medium-low heat for 20-30 seconds. Add olive oil and heat for 15 seconds, then add garlic. Cook garlic 3-4 minutes, or until fragrant and golden.
- Increase heat to high and add plant-based tuna. Using a fork, break apart tuna into smaller pieces. Cook for 4 minutes, stirring often to avoid burning.
- Add lemon juice and stir well. Once bubbles start to form around edges of pan, reduce heat to low and add cooked pasta. Using tongs to toss ingredients together.
- Increase heat to medium while adding the reserved pasta water. Cook about 2 minutes, then add parsley.
- Serve hot with garlic bread and your favorite vegetables.
TIPS
Additional ingredient options:
- Add plant-based butter to sauté pan with olive oil.
- Add white wine to deglaze the pan before adding pasta.
- Stir in capers with garlic.
- Sprinkle in nutritional yeast when adding pasta.
