- In a large bowl, combine all filling ingredients and mix well. Cover bowl and chill in the refrigerator overnight.
- To make sandwiches, spread both sides of rye bread slices with butter. Place two pieces onto a hot skillet and cook on medium heat for about 1 minute or until golden. Flip the bread and scoop 3-4 large tablespoons of filling mixture onto one side of the bread.
- Layer on cheese and cover with the other slice of bread. Using a spatula, lightly place pressure onto the sandwich and cook for about 2 minutes. Flip and repeat until cheese is melty and the sandwich has flattened.
- Repeat for remaining filling and bread. Slice sandwiches in half and serve.
